  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin (about 2 1/2 teaspoons)
  • 1/4 cup cold water
  • Fresh blueberries (for stars)
  • Fresh strawberries, sliced into star shapes with a small cookie cutter (optional)

Instructions

  1. Prepare the Red Jello Layer: Dissolve 1 package of strawberry gelatin in 1 cup boiling water, stirring until fully dissolved. Add 1 cup cold water and mix well. Pour about 1/3 cup of red jello into each serving cup. Refrigerate for 30-45 minutes until firm but not fully set.
  2. Prepare the White Cream Layer: Sprinkle unflavored gelatin over 1/4 cup cold water and let it bloom for 5 minutes. Gently warm the gelatin mixture in a small saucepan just until melted (do not boil). In a chilled bowl, whip heavy cream with powdered sugar and vanilla extract to soft peaks. Slowly drizzle in the warm gelatin while continuing to whip until thickened. Refrigerate to cool slightly but keep pourable.
  3. Layer the White Cream: Once the red jello layer is firm, gently spoon or pour about 1/4 cup of the whipped cream gelatin mixture on top. Return cups to the fridge for at least 30 minutes to set.
  4. Prepare the Blue Jello Layer: Repeat the red jello steps with blueberry gelatin—dissolve in boiling water, add cold water, cool slightly. Pour 1/3 cup over the set white cream layer. Chill again for 1 hour or until completely firm.
  5. Decorate: Just before serving, top with fresh blueberries arranged like stars and strawberry stars if made.

Notes

Let each layer chill until firm before adding the next to prevent mixing. Bloom unflavored gelatin for smooth texture. Pour layers slowly over the back of a spoon to avoid breaking through. Add fresh berries just before serving to avoid sogginess. Avoid freezing layers to maintain creamy texture. For dairy-free version, substitute heavy cream with coconut cream and skip vanilla extract.
