  • 1/2 to 1 teaspoon chili powder or cayenne pepper (adjust to heat preference)
  • 2 tablespoons sugar (optional, adjust if mango juice is sweet)
  • Pinch of salt
  • Fresh mango chunks or lime wedges for garnish (optional)

Instructions

  1. Bloom the gelatin: Sprinkle 3 packets of unflavored gelatin over 1/2 cup (120 ml) of mango juice in a medium bowl. Let sit for 5 minutes to soften.
  2. Heat the juice: Warm the remaining 1 cup (240 ml) mango juice in a small saucepan over medium heat until hot but not boiling (about 160°F or 70°C). Remove from heat.
  3. Dissolve gelatin: Pour the bloomed gelatin into the hot mango juice and whisk until completely dissolved, about 1-2 minutes, ensuring no lumps remain.
  4. Add sweetener and spices: Stir in sugar (if using), chili powder or cayenne pepper (start with 1/2 teaspoon), and a pinch of salt. Taste and adjust heat as desired.
  5. Combine alcohol and lime: Transfer the gelatin mixture to a large bowl. Stir in tequila blanco, triple sec, and freshly squeezed lime juice until well mixed.
  6. Pour into molds: Using a measuring jug, carefully pour the mixture into shot glasses or silicone molds, leaving about 1/4 inch (0.5 cm) space at the top for garnish.
  7. Chill: Refrigerate for at least 4 hours, preferably overnight, until fully set and firm.
  8. Garnish and serve: Just before serving, add a small mango chunk or a lime wedge to each shot for a fresh, festive look.
