  • ½ cup (60g) plain or panko breadcrumbs
  • 1 large egg, room temperature
  • 2 cloves garlic, minced
  • ¼ cup finely chopped onion
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 medium carrots, peeled and cut into sticks
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme, chopped (optional)
  • 2 cups baby spinach or mixed greens
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut 4 medium carrots into sticks about 3 inches long and ½ inch thick. Toss them in 1 tablespoon olive oil, 1 tablespoon honey, and 1 teaspoon chopped fresh thyme (if using). Spread evenly on a rimmed baking sheet. Roast for 25-30 minutes, flipping once halfway through until tender and golden at the edges.
  3. In a large bowl, combine 1 lb ground turkey, ½ cup breadcrumbs, 1 large egg, 2 cloves minced garlic, ¼ cup finely chopped onion, 1 teaspoon smoked paprika, 1 teaspoon dried oregano, and salt & pepper to taste. Mix gently until just combined.
  4. Scoop about 2 tablespoons of the mixture and roll into balls roughly 1.5 inches in diameter, making about 16 meatballs.
  5. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add meatballs in batches without crowding. Cook 4-5 minutes per side until browned and cooked through (internal temp 165°F). If skillet is not oven-safe, finish cooking meatballs in the oven for 5-7 minutes after browning.
  6. While carrots roast and meatballs cook, rinse and dry 2 cups baby spinach or mixed greens. Toss with 1 tablespoon fresh lemon juice.
  7. Divide greens between serving bowls. Top with roasted carrots and meatballs. Drizzle extra olive oil or a yogurt-based sauce if desired.

Notes

Do not overcrowd the skillet when browning meatballs to avoid steaming. Roast carrots at high heat for caramelization; increase oven temperature or roasting time if carrots are not caramelizing well. For gluten-free version, substitute breadcrumbs with almond flour or gluten-free panko. You can bake meatballs entirely in the oven at 400°F for about 20 minutes, turning halfway through. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
