Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch pan, melt 4 tablespoons of unsalted butter over medium heat. Stir in ½ cup packed brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Cook for 2-3 minutes until sugar dissolves and mixture bubbles gently.
  3. Arrange the peeled, cored, and thinly sliced apples in a circular pattern over the caramel mixture. Cook for 5-7 minutes on medium-low heat, spooning caramel over apples occasionally until apples are tender but still hold shape.
  4. Remove the pan from heat and let caramelized apples cool slightly.
  5. In a medium bowl, whisk together 1 ½ cups flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, and ¼ teaspoon nutmeg.
  6. In a large bowl, beat ¼ cup softened butter and ½ cup granulated sugar until light and fluffy, about 3 minutes.
  7. Beat in two large eggs one at a time, mixing well after each. Stir in 1 teaspoon vanilla extract.
  8. Alternately add the dry ingredients and ½ cup sour cream (or Greek yogurt) to the butter mixture, starting and ending with dry ingredients. Mix gently; a few lumps are fine.
  9. Pour batter evenly over the caramelized apple slices in the pan.
  10. Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean.
  11. Let the cake cool for 10-15 minutes in the pan. Run a knife around edges, place a serving plate over the pan, and flip upside down to reveal caramelized apple topping.
