These firecracker grilled shrimp skewers feature a bold, spicy-sweet honey sriracha glaze that is quick and easy to prepare, perfect for a flavorful weeknight dinner or casual gathering.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 tablespoon fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Rinse 1 pound of large shrimp under cold water and pat dry with paper towels. Ensure they are peeled and deveined.
  2. In a mixing bowl, combine 2 tablespoons olive oil, 1 teaspoon smoked paprika, salt, and freshly ground black pepper to taste. Toss the shrimp in this mixture until evenly coated. Let sit for about 10 minutes.
  3. In a separate bowl, whisk together 3 tablespoons honey, 2 tablespoons sriracha sauce, 3 minced garlic cloves, 1 tablespoon soy sauce, and 1 tablespoon fresh lime juice until smooth and slightly thick. Add a splash of water if too thick.
  4. Thread shrimp onto soaked wooden or metal skewers, about 5–6 shrimp per skewer.
  5. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly oil the grill pan if using.
  6. Grill shrimp skewers for 2-3 minutes per side until shrimp are opaque and have grill marks. During the last minute, brush shrimp generously with honey sriracha glaze and turn once more to caramelize without burning.
  7. Remove skewers from grill and let rest for 1-2 minutes before serving.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning. Avoid overcooking shrimp to keep them juicy and tender. Brush glaze on during the last minute of grilling to prevent burning the sugars. Keep extra glaze on the side for dipping or drizzling. For gluten-free, substitute soy sauce with tamari or coconut aminos.
