  • 2 ripe but firm peaches, cut into wedges
  • 1/4 cup (60 ml) good-quality bourbon
  • 3 tablespoons (45 g) brown sugar, packed
  • 2 tablespoons (30 ml) honey
  • 2 tablespoons (30 ml) low sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) fresh lemon juice
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Cut the chicken into 1-inch pieces and peaches into wedges. Set aside.
  2. In a medium bowl, whisk together bourbon, olive oil, soy sauce, lemon juice, brown sugar, honey, minced garlic, and grated ginger until the sugar dissolves.
  3. Add chicken pieces to the marinade, toss to coat well. Cover and refrigerate for at least 1 hour, ideally 2-3 hours for deeper flavor.
  4. Pour the remaining marinade into a small saucepan. Bring to a simmer over medium heat and cook until thickened to a syrupy glaze, about 8-10 minutes, stirring frequently to avoid burning.
  5. Thread chicken and peach wedges alternately onto soaked wooden or metal skewers, leaving a little space between pieces for even heat circulation.
  6. Preheat the grill to medium-high heat (around 375°F or 190°C). Lightly oil the grates to prevent sticking.
  7. Place skewers on the grill and cook for 3-4 minutes per side, brushing generously with the bourbon glaze every turn. Grill until chicken reaches an internal temperature of 165°F (74°C) and peaches have grill marks and soften.
  8. Remove skewers from the grill and let rest for 5 minutes before serving to allow juices to redistribute and glaze to set slightly.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Marinate chicken for at least 1 hour, preferably 2-3 hours for best flavor. Brush glaze in thin layers frequently to avoid burning. Watch peaches carefully as they char quickly. For gluten-free, substitute soy sauce with tamari. For alcohol-free version, replace bourbon with apple cider or white grape juice.
