A smoky, sweet, and refreshing summer cocktail featuring grilled peaches, bourbon, fresh mint, and citrus. Perfect for backyard gatherings or quiet evenings.

  • 2 ripe peaches, halved and pitted
  • 2 ounces bourbon (e.g., Buffalo Trace)
  • 810 fresh mint leaves, plus extra for garnish
  • 1 ounce simple syrup (homemade or store-bought)
  • 1 ounce fresh lemon juice (about half a lemon)
  • Ice cubes
  • Splash of club soda (optional)
  • Optional garnish: wedge of grilled peach or sprig of mint

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F).
  2. Halve and pit the peaches. Lightly brush the cut sides with oil or melted butter to prevent sticking.
  3. Place peaches cut-side down on the grill and grill for 3-4 minutes until grill marks appear and peaches soften slightly.
  4. Remove peaches and let cool for a few minutes.
  5. In a cocktail shaker, add fresh mint leaves and 3-4 chunks of grilled peach. Gently muddle to release oils and juices.
  6. Add bourbon, simple syrup, lemon juice, and a handful of ice cubes to the shaker.
  7. Shake vigorously for about 15 seconds until chilled.
  8. Fill a rocks glass with fresh ice and strain the cocktail mixture into the glass.
  9. Top with a splash of club soda if desired.
  10. Garnish with a sprig of mint and a wedge of grilled peach.

Notes

Use ripe but firm peaches to avoid mushiness. Lightly oil peaches before grilling to prevent sticking. Muddle mint gently to avoid bitterness. Shake with ice to chill and dilute properly. Adjust simple syrup for sweetness if peaches are not very sweet. Club soda is optional for a lighter fizz. Can substitute bourbon with smoky mezcal or make a non-alcoholic version with peach sparkling water or iced tea.
