Tender and juicy chicken drumsticks cooked low and slow in a sweet, tangy, and slightly spicy chili lime sauce. Perfect for easy weeknight dinners or casual get-togethers.

  • 2 pounds (900g) chicken drumsticks, skin-on
  • ½ cup (120ml) sweet chili sauce
  • Juice of 2 fresh limes
  • 2 tablespoons (30ml) soy sauce (low sodium preferred)
  • 3 garlic cloves, minced
  • 1 tablespoon (15ml) honey
  • 1 teaspoon (5ml) ground ginger
  • ¼ teaspoon (1ml) red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse and pat dry the chicken drumsticks. Trim any excess skin or fat if desired.
  2. In a mixing bowl, combine sweet chili sauce, lime juice, soy sauce, minced garlic, honey, ground ginger, and red pepper flakes if using. Whisk until smooth.
  3. Add the chicken drumsticks to the bowl and toss to coat thoroughly. Marinate for 30 minutes if time allows (optional).
  4. Place the drumsticks and sauce into the slow cooker, arranging evenly. Cover with the lid.
  5. Cook on LOW for 5–6 hours, turning the drumsticks halfway through cooking to redistribute the sauce.
  6. For a stickier glaze, remove the lid during the last 30 minutes of cooking. Optionally, broil the drumsticks for 3-5 minutes to crisp the skin.
  7. Garnish with chopped fresh cilantro before serving.

Notes

Optional to brown drumsticks before slow cooking for extra flavor and color. Turn drumsticks halfway through cooking for even sauce coating. Broil at the end for crispier skin. Use fresh lime juice for best flavor. Adjust salt carefully due to soy sauce saltiness. Can bake in oven at 325°F (160°C) for 1.5 hours if no slow cooker is available.
