A quick and easy brunch recipe featuring crispy toasted artisan bread topped with creamy avocado spread, smoky smoked salmon, and fresh garnishes for a flavorful and impressive toast board.

Ingredients

  • Artisan bread (sourdough or multigrain), sliced and toasted
  • Extra virgin olive oil (for brushing the toast)
  • Ripe avocados, mashed
  • Fresh lemon juice (about 1 tablespoon per 2 avocados)
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Red pepper flakes (optional)
  • Thinly sliced smoked salmon (wild-caught recommended)
  • Capers (rinse if too salty)
  • Thinly sliced red onion
  • Fresh dill sprigs
  • Cream cheese or labneh (optional)
  • Cherry tomatoes, halved
  • Everything bagel seasoning
  • Flaky sea salt

Instructions

  1. Preheat grill pan or toaster. Brush each bread slice lightly with olive oil. Toast until crispy and golden brown on both sides (about 3-4 minutes per side on grill pan).
  2. In a mixing bowl, mash ripe avocado flesh with fresh lemon juice, sea salt, black pepper, and red pepper flakes if using. Adjust seasoning to taste.
  3. Thinly slice red onion rings and halve cherry tomatoes. Keep separate in small bowls.
  4. Arrange toasted bread slices on a serving board. Spread a generous layer of avocado mixture onto each slice or serve on the side for customization.
  5. Fold or loosely pile thin slices of smoked salmon atop the avocado spread.
  6. Sprinkle capers, red onion slices, fresh dill sprigs, and cherry tomatoes around the board and on the toasts. Add dollops of cream cheese or labneh if desired.
  7. Finish with a sprinkle of everything bagel seasoning and flaky sea salt. Drizzle extra virgin olive oil over the salmon and avocado if desired.
  8. Serve immediately for best texture contrast.

Use ripe avocados that yield slightly to gentle pressure for best texture. Rinse capers if too salty to balance flavors. Toast bread just right to avoid sogginess.
