These turkey taco lettuce wraps offer a quick, healthy, and flavorful meal prep option with bold spices and fresh, crisp lettuce for a satisfying low-carb taco experience.

  • 1 lb lean ground turkey
  • 1 head romaine or butter lettuce leaves
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp chipotle powder or cayenne (optional)
  • 2 tbsp tomato paste
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional toppings: diced avocado, chopped cilantro, shredded cheddar or Monterey Jack cheese, Greek yogurt or sour cream, fresh salsa or pico de gallo

Instructions

  1. Gently separate the lettuce leaves from the head, rinse under cold water, and pat dry thoroughly with paper towels.
  2. Finely dice the onion and mince the garlic cloves.
  3. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the chopped onion and sauté for 2-3 minutes until softened but not browned.
  4. Add the garlic and cook for another 30 seconds until fragrant.
  5. Add the ground turkey, crumble it into the pan, and cook for 5-7 minutes, stirring occasionally, until no longer pink.
  6. Sprinkle in chili powder, cumin, smoked paprika, chipotle or cayenne (if using), salt, and pepper. Stir well and cook for 2 more minutes.
  7. Stir in the tomato paste and cook for another minute.
  8. Squeeze fresh lime juice over the mixture and stir to combine.
  9. Taste and adjust seasoning with salt, pepper, or lime juice as needed. Add a splash of water or broth if the mixture feels dry.
  10. Spoon a generous amount of turkey mixture onto each lettuce leaf and add desired toppings.
  11. Serve immediately or store turkey filling and lettuce leaves separately in airtight containers for up to 4 days.

Notes

Keep lettuce leaves well dried and chilled until assembly to prevent sogginess. Cook turkey over medium-high heat and stir often to retain moisture. Toast spices briefly with meat for enhanced flavor. Avoid overfilling lettuce leaves to prevent tearing.
