  • 1 teaspoon (5ml) soy sauce (low sodium preferred)
  • 1 teaspoon (5ml) rice wine vinegar
  • Juice of half a fresh lemon
  • Freshly ground black pepper, to taste
  • Sesame seeds (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together softened butter, miso paste, honey or maple syrup, minced garlic, soy sauce, and rice wine vinegar until smooth and creamy. If butter is too cold, let it soften or microwave briefly in 5-second bursts.
  3. Pat the salmon fillets dry with paper towels to remove excess moisture.
  4. Place the salmon skin-side down on a lined baking sheet.
  5. Generously coat the top of each fillet with the miso butter glaze using a spoon or basting brush.
  6. Season lightly with freshly ground black pepper.
  7. Roast the salmon in the preheated oven for 12-15 minutes, depending on thickness, until it flakes easily with a fork but remains moist inside. For a crispier top, broil for the last 1-2 minutes, watching closely to avoid burning.
  8. Remove from the oven and squeeze fresh lemon juice over the fillets.
