  • 3/4 cup (150g) granulated sugar
  • 1 1/2 cups (about 150g) fresh cranberries, rinsed and dried
  • 1 cup (240ml) buttermilk (or 1 cup milk + 1 tablespoon vinegar, let sit 5 minutes)
  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Zest of one orange (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together dry ingredients: all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Set aside.
  3. In a separate bowl, combine wet ingredients: buttermilk, vegetable oil, eggs, vanilla extract, and orange zest if using. Whisk until smooth and slightly frothy.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined, avoiding overmixing.
  5. Fold in fresh cranberries carefully using a silicone spatula to avoid crushing them.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-22 minutes, checking at 18 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  8. Cool muffins in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
