  • 2 large eggs, room temperature
  • 1 scoop vanilla protein powder (optional)
  • 1 tsp baking powder

  • 12 tbsp maple syrup or honey
  • Pinch of salt
  • For the Fresh Strawberry Compote:
  • 2 cups fresh strawberries, hulled and halved
  • 2 tbsp water
  • 12 tbsp maple syrup or sugar
  • 1 tsp lemon juice
  • Optional: a pinch of cinnamon or vanilla bean paste

Instructions

  1. Make the oat flour: Add 1 cup rolled oats to your blender or food processor. Pulse until it’s a fine, flour-like consistency (about 30-45 seconds). Set aside.
  2. Mix dry ingredients: In a bowl, combine the oat flour, protein powder (if using), baking powder, and salt. Stir to blend evenly.
  3. Combine wet ingredients: In another bowl, whisk the eggs, Greek yogurt, vanilla extract, and maple syrup until smooth.
  4. Form the batter: Slowly add the dry mix into the wet, folding gently. The batter should be thick but pourable. If too thick, add a tablespoon of milk. Let the batter rest for 5 minutes.
  5. Prepare the strawberry compote: While the batter rests, add strawberries, water, maple syrup, and lemon juice to a small saucepan over medium heat. Stir occasionally, letting the berries soften and break down (about 8-10 minutes). Remove from heat and keep warm.
  6. Cook the pancakes: Heat a non-stick skillet over medium heat and lightly grease. Pour 1/4 cup batter per pancake. Cook until bubbles form and edges set (2-3 minutes). Flip and cook 1-2 minutes until golden brown.
  7. Serve immediately: Stack pancakes and spoon warm strawberry compote on top. Add extra Greek yogurt or maple syrup if desired.

Notes

Do not overmix the batter; a few lumps are okay. Let the batter rest 5-10 minutes for fluffier pancakes. Use moderate heat to avoid burning. Flip pancakes only once when bubbles form and edges set. Make the compote while batter rests to save time. For vegan version, substitute eggs with flax or chia egg and Greek yogurt with plant-based yogurt.
