  • 2 cups diced heirloom tomatoes (about 4 medium heirlooms)
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and black pepper to taste
  • 1 loaf baguette or rustic Italian bread, sliced 1/2 inch thick
  • Optional: fresh mozzarella or shaved Parmesan cheese

Instructions

  1. Wash and dry the heirloom tomatoes. Dice into roughly 1/2-inch pieces and place in a mixing bowl.
  2. Finely chop the fresh basil leaves and mince the garlic cloves. Add both to the bowl with the tomatoes.
  3. Drizzle the extra virgin olive oil and balsamic vinegar over the tomato and basil mixture. Sprinkle with salt and freshly cracked black pepper to taste. Gently toss until well combined.
  4. Slice the baguette into 1/2-inch thick slices. Toast the slices over medium heat in a grill pan or under the broiler until golden brown and crisp.
  5. Optional: Rub a peeled garlic clove lightly over one side of each toasted bread slice while still warm.
  6. Spoon the tomato mixture generously over each toasted bread slice. Add torn fresh mozzarella or a sprinkle of shaved Parmesan if desired.
  7. Serve immediately to keep the bread crisp. Garnish with whole basil leaves if desired.

Notes

If tomatoes seem watery, drain excess liquid before mixing to avoid soggy bread. Toast bread until golden and crisp but still chewy. Assemble just before serving to maintain crispness. Let tomato mixture sit 5-10 minutes after seasoning for best flavor. For gluten-free, use gluten-free bread. For dairy-free, omit cheese or use plant-based alternatives.
