  • Snap peas, trimmed

  • Asparagus spears, blanched for 1-2 minutes (optional)
  • 4 oz (115 g) goat cheese, softened
  • 1/2 cup (120 ml) Greek yogurt or sour cream
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 small garlic clove, minced
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper, to taste
  • Olive oil, for drizzling (optional)

Instructions

  1. Prepare the Vegetables (10 minutes): Rinse all veggies under cold water and pat dry. Peel and trim baby carrots if needed. Trim snap peas by snapping off the stem ends and removing the stringy seam. Slice radishes thinly, and cut cucumbers into rounds or sticks. Halve cherry tomatoes and slice bell peppers into thin strips. If using asparagus, blanch in boiling salted water for 1-2 minutes, then transfer to ice water and drain well.
  2. Make the Herbed Goat Cheese Dip (5 minutes): In a mixing bowl, combine softened goat cheese with Greek yogurt or sour cream. Add minced garlic, lemon juice, and chopped herbs (chives, parsley, thyme). Mix until smooth and creamy. Season with salt and pepper to taste. If dip is too thick, add a teaspoon of water or olive oil to loosen. Adjust herbs or lemon juice as needed.
  3. Assemble the Crudite Board (5 minutes): Arrange the vegetables in colorful groups or patterns on a serving platter. Place the bowl of herbed goat cheese dip in the center or off to one side. Drizzle dip with olive oil and sprinkle extra chopped herbs on top for garnish.
  4. Final Touches: Cover the board lightly with plastic wrap if prepping ahead. Keep refrigerated until ready. Bring to room temperature about 15 minutes before serving.
