Instructions

  1. Prepare the Mango Pico de Gallo: Dice the mango, Roma tomatoes, red onion, and jalapeño. Chop the cilantro and combine all in a bowl. Add lime juice and a pinch of salt, stir, and let sit while cooking the turkey.
  2. Cook the Ground Turkey: Heat olive oil in a skillet over medium heat. Add ground turkey and cook, breaking it up with a spatula. After 3-4 minutes, add minced garlic, cumin, chili powder, salt, and pepper. Cook until browned and cooked through, about 8-10 minutes total.
  3. Prepare the Lettuce Wraps: Rinse and pat dry the romaine lettuce leaves. Trim the thick stem at the base for easier folding and arrange on a serving plate.
  4. Assemble the Wraps: Spoon seasoned turkey onto each lettuce leaf. Top with a heaping tablespoon of mango pico de gallo. Add optional avocado slices or Greek yogurt if desired.
  5. Serve Immediately: Enjoy fresh to keep the lettuce crisp and flavors bright. If prepping ahead, keep turkey and pico de gallo separate and assemble just before serving.
