A quick, easy, and refreshing summer drink combining sweet watermelon, tangy lime, and a spicy Tajin rim for a perfect balance of flavors.

Ingredients

Scale
  • 6 cups cubed fresh watermelon (about 1 small to medium watermelon)
  • Juice of 2 large limes (about 1/4 cup or 60 ml)
  • 1 to 2 cups cold water (240480 ml), adjust to taste
  • 1 to 2 tablespoons granulated sugar or agave syrup (optional)
  • Tajin seasoning for rimming glasses
  • Ice cubes for serving

Instructions

  1. Cube about 6 cups (900 grams) of watermelon into chunks, removing seeds if necessary.
  2. Add watermelon cubes to a blender and pulse until smooth, about 30-45 seconds.
  3. Pour the watermelon puree through a fine mesh strainer or cheesecloth into a large bowl or pitcher to remove pulp and seeds. Press pulp to extract as much juice as possible.
  4. Stir in the juice of 2 large limes (about 60 ml) and 1 to 2 tablespoons of sugar or agave syrup. Adjust sweetness to taste.
  5. Add 1 to 2 cups (240-480 ml) of cold water to dilute to desired consistency.
  6. Pour Tajin seasoning onto a small plate. Rub a lime wedge around the rim of each glass to moisten it, then dip the rims into the Tajin to coat evenly.
  7. Fill each glass with ice cubes and pour the agua fresca over the top. Garnish with a lime wheel or small watermelon wedge if desired.

Notes

Use fresh lime juice for best flavor. Adjust sweetness based on watermelon sweetness. Chill juice for at least 30 minutes before serving for best taste. Rim glasses with Tajin just before serving to keep seasoning fresh. Coconut water can replace plain water for a tropical twist. For sugar-free, omit sweetener if watermelon is very sweet. Substitute Tajin with chili powder and sea salt if needed.
