  • 4 cups (600g) seedless watermelon, cut into 1-inch cubes
  • 2 medium cucumbers (about 300g), peeled if desired and cut into chunks
  • 1 cup (150g) crumbled feta cheese
  • ¼ cup (15g) fresh mint leaves, roughly chopped or torn
  • 2 tablespoons (30ml) freshly squeezed lime juice
  • 1 teaspoon (5ml) honey
  • 2 tablespoons (30ml) extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Cut the seedless watermelon into 1-inch bite-sized cubes and place in a large mixing bowl.
  2. Slice the cucumbers into similar-sized chunks, peel if preferred, and add to the bowl.
  3. Wash and dry the fresh mint leaves, then roughly chop or tear and add to the watermelon and cucumber.
  4. In a small bowl or jar, whisk together the lime juice, olive oil, honey, salt, and black pepper until emulsified and slightly thickened.
  5. Crumble the feta cheese over the salad ingredients evenly.
  6. Pour the lime dressing over the salad and toss gently with salad tongs or large spoons to coat without crushing the watermelon.
  7. Let the salad rest for 10-15 minutes at room temperature to allow flavors to meld.
  8. Serve fresh, chilled, or at cool room temperature.

Notes

Use firm, ripe watermelon to avoid sogginess. Fresh lime juice is essential for brightness. Toss salad gently to avoid crushing watermelon. Let salad rest 10-15 minutes before serving for best flavor. Prepare dressing last and add just before serving if making ahead.
