Fresh Watermelon Feta Skewers with Mint and Balsamic Glaze

A refreshing and easy-to-make appetizer combining juicy watermelon, salty feta, fresh mint, and a sweet-tart balsamic glaze. Perfect for summer parties or quick snacks.

  • 4 cups seedless watermelon, cut into 1-inch cubes (about 500g)
  • 8 oz feta cheese, crumbled or cut into cubes (about 225g)
  • 20 fresh mint leaves, washed and dried
  • 3 tablespoons balsamic glaze (store-bought or homemade)
  • Optional: drizzle of extra virgin olive oil
  • About 12 wooden skewers, soaked in water for 10 minutes

Instructions

  1. Cut the watermelon into 1-inch cubes, removing any seeds if present.
  2. Cut the feta into similar-sized cubes for balanced bites.
  3. Gently rinse fresh mint leaves and pat dry with a paper towel.
  4. Thread one cube of watermelon, followed by a mint leaf, then a cube of feta onto each skewer. Repeat the pattern until the skewer is full (3-4 sets per skewer).
  5. If making balsamic glaze from scratch, pour ½ cup balsamic vinegar into a small saucepan and simmer over medium heat until reduced by half and syrupy (about 10 minutes). Let cool slightly.
  6. Arrange the skewers on a platter and lightly drizzle with balsamic glaze.
  7. Optionally, add a small drizzle of extra virgin olive oil for richness.
  8. Serve immediately for best freshness or chill for up to an hour before serving.

Notes

Soak wooden skewers in water before use to prevent burning if grilling. Add mint leaves just before serving to keep them fresh. For a smoky flavor, briefly grill skewers 1-2 minutes per side. Store assembled skewers covered in the fridge up to 24 hours but add balsamic glaze just before serving to avoid sogginess.
