  • 1 kiwi, peeled and sliced thin
  • 1/4 cup pomegranate seeds
  • A handful of fresh mint leaves, roughly chopped (optional)
  • 12 tablespoons chia seeds or crushed nuts (optional)

Instructions

  1. Rinse and dry the watermelon. Cut off both ends to create a flat base, then slice the watermelon into 1-inch thick rounds (about 3-4 slices per melon).
  2. Carefully cut along the edge to remove the rind from each round, leaving just the juicy red flesh as the crust.
  3. In a mixing bowl, stir the Greek yogurt with 1 tablespoon of honey or maple syrup for sweetness (adjust to taste).
  4. Spread about 1/4 cup (60 ml) of the yogurt evenly over each watermelon round using a spoon or spatula.
  5. Wash and prepare fruit toppings: slice strawberries thinly, peel and slice kiwi, gather blueberries and pomegranate seeds.
  6. Arrange the fruit toppings artfully over the yogurt layer.
  7. Sprinkle chopped fresh mint leaves and chia seeds or crushed nuts on top for added freshness and texture.
