  • 3 ½ cups (440g) all-purpose flour
  • 2 ¼ tsp (7g) active dry yeast
  • 1 ⅓ cups (320ml) warm water (110°F or 43°C)
  • 3 tbsp (45ml) olive oil
  • 1 tsp (5g) salt
  • 1 bulb garlic, roasted
  • ¼ cup (25g) grated parmesan cheese
  • 4 tbsp (57g) softened butter
  • 1 tbsp (15ml) olive oil
  • 1 tsp chopped rosemary
  • 1 tsp thyme
  • 1 tsp parsley

Instructions

  1. In a large mixing bowl, combine active dry yeast with warm water and let sit for 5 minutes until foamy.
  2. Stir in olive oil, all-purpose flour, and salt. Mix until a sticky dough forms.
  3. Transfer the dough to a floured surface and knead for 5-7 minutes until smooth. Place in an oiled bowl, cover with plastic wrap, and let rise for 1 hour or until doubled in size.
  4. Preheat oven to 375°F (190°C). Wrap a whole bulb of garlic in foil and bake for 30 minutes until soft. Let cool, then squeeze out the cloves.
  5. Grease a 9×13-inch baking pan with olive oil. Punch down the dough and spread it evenly in the pan. Cover and let rise for another 30 minutes.
  6. In a small bowl, mix softened butter with olive oil, rosemary, thyme, parsley, roasted garlic, and grated parmesan cheese.
  7. Preheat oven to 400°F (200°C). Use fingertips to press dimples all over the dough. Spread the herb butter mixture evenly on top.
  8. Bake for 20-25 minutes or until golden brown. Remove from oven and let cool slightly before slicing.
