  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) whole milk
  • 2 cups (about 2 medium) apples, peeled and diced
  • 1/2 cup (100g) brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup (50g) brown sugar
  • 1 tsp ground cinnamon
  • 1 cup (120g) powdered sugar
  • 23 tbsp (30–45ml) milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a bowl, toss the diced apples with brown sugar and cinnamon. Set aside.
  3. Mix the brown sugar and cinnamon in a small bowl for the cinnamon swirl.
  4. Cream the softened butter and granulated sugar until light and fluffy, about 2–3 minutes. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, alternating with the milk. Mix just until combined.
  6. Pour half of the batter into the prepared loaf pan. Spoon half of the apple mixture on top, followed by a sprinkle of the cinnamon swirl mixture. Repeat with the remaining batter, apples, and cinnamon swirl.
  7. Use a butter knife to gently swirl the layers together. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bread.
