A quick and easy recipe featuring lean ground turkey wrapped in crisp lettuce leaves, served with a creamy peanut dipping sauce that adds a perfect balance of savory and tangy flavors.

  • 1 lb (450g) ground turkey (lean, preferably 93% lean)
  • 1 tablespoon olive oil or avocado oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup shredded carrots
  • 1/4 cup water chestnuts, chopped (optional but recommended)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon grated fresh ginger
  • Salt and black pepper, to taste
  • 1 large head iceberg or butter lettuce (leaves separated and washed)
  • 1/4 cup creamy peanut butter (natural preferred)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Water to thin the sauce
  • Optional: pinch of red pepper flakes or dash of sriracha

Instructions

  1. Wash and separate the lettuce leaves carefully, drying them well.
  2. Finely chop the onion, mince garlic and ginger, shred carrots, and chop water chestnuts if using.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  4. Add chopped onion and cook until translucent, about 3 minutes.
  5. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  6. Add ground turkey, crumble and cook until no longer pink, about 6-8 minutes. Season with salt and pepper.
  7. Stir in shredded carrots and chopped water chestnuts.
  8. Pour in soy sauce and hoisin sauce if using, cook for another 2-3 minutes.
  9. Whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a small bowl.
  10. Add water gradually until sauce reaches a smooth, dippable consistency. Add red pepper flakes or sriracha if desired.
  11. Arrange lettuce leaves on a platter, spoon turkey mixture into each leaf.
  12. Serve with creamy peanut dipping sauce on the side for dipping or drizzling.

Notes

Do not overcrowd the pan when cooking turkey to ensure proper browning. Keep lettuce leaves dry to maintain crispness. Serve peanut sauce on the side to preserve its creamy texture. Adjust heat level in sauce carefully, especially for kids. Leftover turkey filling can be refrigerated for up to 3 days or frozen for up to 3 months.
