  • 4 cups (about 600g) frozen corn kernels, thawed
  • 4 tablespoons unsalted butter, softened
  • 3 tablespoons honey
  • 2 ounces (about 55g) cream cheese, softened
  • 2 tablespoons whole milk
  • ½ teaspoon kosher salt
  • Optional: A pinch of cayenne or smoked paprika

Instructions

  1. Thaw the corn completely and pat dry with a paper towel to remove excess moisture.
  2. Place a skillet over medium heat and add 2 tablespoons of butter. Let it melt and bubble slightly.
  3. Add the corn kernels to the skillet. Stir occasionally, cooking for about 5-7 minutes until slightly golden and heated through.
  4. In a small bowl, combine the remaining butter, honey, cream cheese, milk, and salt. Stir until smooth.
  5. Pour the honey butter mixture over the corn in the skillet. Stir well to coat each kernel evenly.
  6. Lower the heat slightly and let the corn simmer for 3-5 minutes, stirring occasionally, until the sauce thickens and coats the corn.
  7. Taste and adjust the salt or add a pinch of cayenne for heat. Serve warm.
