  • 4 slices thick-cut bacon
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, freshly cracked, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the Brussels sprouts thoroughly, pat them dry, trim the ends, and slice each sprout in half lengthwise.
  3. In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and transfer to a paper towel-lined plate to drain. Reserve about 2 tablespoons of bacon grease in the skillet.
  4. In a small mixing bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, salt, and black pepper to make the honey mustard glaze.
  5. In a large mixing bowl, combine the halved sprouts with the reserved bacon grease and half of the honey mustard glaze. Toss to coat evenly.
  6. Spread the coated sprouts onto the prepared baking sheet in a single layer. Roast for 20-25 minutes, flipping halfway through, until golden brown and crispy on the edges.
  7. Once the sprouts are done roasting, remove them from the oven and toss with the crispy bacon pieces. Drizzle the remaining honey mustard glaze over the top and gently toss again.
  8. Transfer the Honey Mustard Brussels Sprouts with Bacon to a serving dish and enjoy immediately while warm. Garnish with freshly cracked black pepper if desired.
