  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar

  • 2 large apples, peeled, cored, and diced

  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan with butter or non-stick spray. Line the bottom with parchment paper.
  2. In a small saucepan, melt 1 tablespoon of butter over medium heat. Add diced apples, 2 tablespoons of sugar, and 1 teaspoon of cinnamon. Cook for 5-7 minutes until the apples are tender and slightly caramelized. Remove from heat and let cool.
  3. In a medium bowl, whisk together 2 cups of flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt.
  4. In a large bowl, use an electric mixer to beat ½ cup softened butter and 1 cup sugar together until light and fluffy (about 2-3 minutes).
  5. Beat in the eggs one at a time, followed by 1 teaspoon of vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with ½ cup of milk. Start and end with the dry ingredients. Mix until just combined.
  7. Pour half of the cake batter into the prepared pan and spread it evenly. Spoon half of the apple filling over the batter, gently swirling it with a knife. Repeat with the remaining batter and apple mixture.
  8. Bake the cake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  9. In a small bowl, whisk together 1 cup powdered sugar, 2-3 tablespoons milk, and ½ teaspoon vanilla extract until smooth. If the glaze is too thick, add a few more drops of milk.
  10. Once the cake is cool, drizzle the glaze evenly over the top. Let the glaze set for 10 minutes before slicing and serving.
