  • 6 oz thick-cut bacon, diced
  • 2 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 12 cloves garlic, minced

  • Fresh parsley for garnish (optional)

Instructions

  1. Fill a large pot with water, season generously with salt, and bring to a boil. Cook 12 oz of spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat a large skillet over medium heat and add 6 oz of diced thick-cut bacon. Cook until crispy, about 5 minutes. Remove the bacon with a slotted spoon, leaving the rendered fat in the pan.
  3. Lower the heat to medium-low and add 1-2 minced garlic cloves to the skillet. Cook for 30 seconds, stirring constantly to avoid burning. Turn off the heat.
  4. While the pasta cooks, whisk together 2 large eggs and 1 cup of freshly grated Parmesan cheese in a mixing bowl. Add a generous pinch of salt and freshly cracked black pepper.
  5. Add the hot, drained pasta to the skillet with the bacon fat and garlic. Quickly pour in the egg-cheese mixture, tossing vigorously with tongs to coat the pasta evenly. The heat from the pasta will cook the eggs, creating a creamy sauce.
  6. Stir in the crispy bacon. If the sauce is too thick, add reserved pasta water a tablespoon at a time until you achieve the desired consistency.
  7. Serve immediately, garnished with more Parmesan cheese, freshly cracked pepper, and chopped parsley, if desired.
