  • 2 cups (200 g) sharp cheddar cheese, shredded
  • 6 slices bacon, cooked crisp and crumbled
  • 1 packet (about 2 tablespoons) ranch seasoning mix
  • 2 stalks green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Cook 6 slices of bacon until crispy, either in a skillet over medium heat for 8-10 minutes or baked in the oven at 400°F (200°C) for 15-20 minutes. Drain on paper towels and crumble once cooled.
  2. Let 8 oz (225 g) of cream cheese sit at room temperature for about 30 minutes to soften.
  3. In a medium bowl, use a hand mixer to beat the softened cream cheese until smooth. Add 2 cups (200 g) shredded sharp cheddar, 1 packet (about 2 tbsp) ranch seasoning, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp Worcestershire sauce, and freshly ground black pepper to taste. Mix until fully incorporated and creamy. Add a splash of milk if mixture is too stiff.
  4. Fold in 4 slices (crumbled) of cooked bacon and 2 finely chopped green onions using a spatula. Save some bacon and green onions for coating the outside.
  5. Lay out a large piece of plastic wrap or parchment paper. Scoop the mixture onto the center and form it into a tight ball about 5 inches (12 cm) in diameter. Twist the wrap to tighten and refrigerate for at least 1 hour to firm up.
  6. On a plate, mix reserved crumbled bacon and chopped green onions. Remove the cheese ball from the fridge and roll it gently in the bacon and green onion mixture until fully coated.
  7. Place the cheese ball on a serving board with crackers, sliced baguette, or fresh veggies for dipping. Store leftovers wrapped tightly in the fridge for up to 4 days.

Notes

Let cream cheese soften properly to avoid lumps. Baking bacon is recommended for even crispiness and less mess. Chill cheese ball at least 1 hour for best slicing and spreading.
