A quick and easy appetizer featuring sweet Medjool dates stuffed with creamy goat cheese and wrapped in crispy bacon, perfect for parties and gatherings.

  • 20 large Medjool dates, pitted
  • 4 ounces (115 grams) goat cheese, softened
  • 10 slices bacon, cut in half
  • Toothpicks for securing bacon
  • Optional: honey or balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Carefully slice each date lengthwise on one side to create an opening without cutting all the way through.
  3. Fill each date cavity with about 1 teaspoon (5 grams) of softened goat cheese.
  4. Wrap one half-slice of bacon tightly around each stuffed date, covering the opening and cheese. Secure with a toothpick.
  5. Place the bacon-wrapped dates seam-side down on the prepared baking sheet, ensuring they do not touch.
  6. Bake for 20–25 minutes until bacon is crispy and golden brown, flipping halfway through to crisp evenly.
  7. Remove from oven and let cool for a few minutes. Drizzle with honey or balsamic glaze if desired.
  8. Serve warm and enjoy.

Notes

Use thick-cut bacon for better texture. Soften goat cheese at room temperature for easier stuffing. Flip dates halfway through baking for even crispiness. Tent with foil if bacon crisps too fast. Let rest a few minutes before serving. Can substitute cream cheese or blue cheese for goat cheese. For dairy-free, use vegan cheese alternative. Can grill instead of bake for 10-12 minutes.
