These bacon-wrapped jalapeño chicken bites are a quick, easy, and flavorful appetizer perfect for parties. Crispy bacon hugs tender chicken with a spicy jalapeño kick, delivering a delicious flavor explosion.

  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 medium jalapeño peppers, deseeded and finely chopped
  • 8 slices bacon, cut in half (preferably thick-cut)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 ounces cream cheese, softened (optional)
  • A handful fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken breast into roughly 1-inch bite-sized cubes and place in a mixing bowl.
  3. Add olive oil, garlic powder, paprika, salt, and pepper to the chicken. Toss well to coat evenly.
  4. Slice jalapeños in half lengthwise and remove seeds and membranes if desired. Optionally, spread softened cream cheese inside each jalapeño half.
  5. Wrap each seasoned chicken cube with a half slice of bacon, place a jalapeño half on top, and secure with a toothpick.
  6. Place the bites on a wire rack set over a rimmed baking sheet.
  7. Bake for 20-25 minutes, flipping halfway through, until bacon is golden and crisp and chicken reaches 165°F (74°C) internal temperature.
  8. Remove toothpicks, garnish with chopped cilantro, and serve warm.

Notes

Use a wire rack to keep bacon crispy by allowing fat to drip away. Flip bites halfway through baking for even crispiness. Tent bacon edges with foil if they cook too fast. Let bites rest a few minutes after baking to redistribute juices. For milder heat, remove jalapeño seeds or substitute with poblano or sweet mini peppers. For dairy-free, omit cream cheese or use a plant-based alternative.
