  • 1 ½ cups (225 g) fresh or frozen blueberries
  • For the streusel topping:
  • ½ cup (60 g) all-purpose flour
  • ⅓ cup (70 g) packed brown sugar
  • 4 tablespoons (57 g) cold unsalted butter, cubed
  • ½ teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare streusel topping: In a small bowl, combine ½ cup flour, ⅓ cup brown sugar, ½ teaspoon cinnamon, and a pinch of salt. Add cold cubed butter and work into coarse crumbs using a pastry cutter, forks, or fingers. Chill in fridge.
  3. Mix dry ingredients for batter: whisk together 1 ¾ cups flour, baking powder, baking soda, salt, and granulated sugar in a large bowl.
  4. Combine wet ingredients: whisk eggs, melted butter, buttermilk, and vanilla extract in another bowl until smooth.
  5. Pour wet ingredients into dry and gently stir with a wooden spoon or spatula until just combined; batter should be lumpy.
  6. Fold in blueberries gently, adding frozen berries straight from freezer if using.
  7. Divide batter evenly into muffin cups, filling each about ¾ full.
  8. Sprinkle chilled streusel topping generously over each muffin.
  9. Bake for 20-25 minutes until a toothpick inserted comes out clean or with a few moist crumbs and tops are golden brown.
  10. Cool muffins in pan for 5 minutes, then transfer to wire rack to cool completely.

Keep butter cold for streusel topping to ensure crumbly texture. Do not overmix batter to keep muffins light and fluffy. Add frozen blueberries straight from freezer to prevent color bleeding.
