Ingredients

Scale
  • 2 medium apples, peeled, cored, and diced (Honeycrisp or Granny Smith work best)
  • 2 cups all-purpose flour (plus extra for dusting)
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 3/4 cup milk (whole milk preferred)
  • 2 tablespoons butter, melted
  • Vegetable oil for frying (about 4 cups)
  • 1/2 cup maple syrup
  • 2 tablespoons bourbon
  • 1 cup powdered sugar

Instructions

  1. Peel, core, and dice your apples into small chunks. Set aside.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the eggs, milk, and melted butter until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced apples.
  5. In a frying pan or Dutch oven, heat the vegetable oil to 375°F (190°C). Use a thermometer to monitor the temperature.
  6. Scoop spoonfuls of batter into the hot oil, flattening slightly. Cook for 2-3 minutes per side or until golden brown. Remove with a slotted spoon and place on a cooling rack.
  7. In a small saucepan, whisk together the maple syrup, bourbon, and powdered sugar over low heat until smooth.
  8. Once the fritters have cooled slightly, drizzle or brush the bourbon maple glaze generously over each fritter.

Notes

Monitor oil temperature to ensure crispy fritters. Substitute bourbon with vanilla extract for a kid-friendly version.
