This cheesy gnocchi and broccoli bake is the ultimate comfort food, combining gooey cheese, tender gnocchi, and roasted broccoli for a satisfying and easy-to-make dish.

  • 16 oz potato gnocchi
  • 3 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup grated cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or cooking spray.
  2. Prepare the broccoli by cutting it into bite-sized florets. Toss them with a tablespoon of olive oil, a pinch of salt, and pepper. Spread them evenly on a baking sheet and roast for 15 minutes, or until they’re slightly caramelized and tender.
  3. While the broccoli is roasting, cook the potato gnocchi according to the package instructions. Drain and set aside.
  4. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  5. Lower the heat and pour in the heavy cream and milk. Whisk gently to combine, and let it simmer for 3-4 minutes.
  6. Gradually add the cheddar, parmesan, and half of the mozzarella cheese, whisking until melted and smooth. Season with salt and pepper to taste. If the sauce feels too thick, add an extra splash of milk.
  7. In the greased baking dish, combine the roasted broccoli, cooked gnocchi, and cheese sauce. Toss gently to coat everything evenly.
  8. Top the mixture with the remaining mozzarella cheese and sprinkle breadcrumbs on top for added crunch, if using.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and lightly golden on top.
  10. Let it cool for 5 minutes before serving. Enjoy the cheesy, comforting goodness!
