  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth (low-sodium preferred)
  • 1/4 cup dry white wine (optional)
  • Juice of 1 lemon
  • 2 tablespoons chopped parsley
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Slice the chicken breasts into thin strips. In a shallow dish, mix the flour, garlic powder, paprika, salt, and pepper. Dredge the chicken strips in the flour mixture, shaking off any excess.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the chicken broth, white wine (if using), and lemon juice. Let it simmer for 3-4 minutes to reduce slightly.
  4. Add the cooked chicken back to the skillet, coating it in the sauce. Sprinkle with chopped parsley and keep warm.
  5. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute. Stir in the rice and cook for 1-2 minutes to toast slightly. Add the chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes, or until the rice is tender.
  6. Once the rice is cooked, stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  7. Spoon the garlic Parmesan rice onto plates and top with the chicken scampi. Drizzle extra sauce over the top for maximum flavor.
