Instructions

  1. In a large mixing bowl, whisk together the two packages of instant vanilla pudding mix with 3 cups of cold milk. Beat for about 2 minutes until thickened. Let sit for 5 minutes to set.
  2. Arrange about half of the graham crackers in a single layer on the bottom of a 9×13-inch baking dish, breaking a few if needed to fill gaps.
  3. Spread half of the pudding mixture evenly over the graham cracker layer using a spatula.
  4. Place the remaining graham crackers over the pudding layer, lining them up evenly.
  5. Spread half of the thawed whipped topping over the second layer of graham crackers.
  6. In a microwave-safe bowl, combine chocolate chips and softened butter. Microwave in 30-second intervals, stirring well between each, until smooth and glossy. Stir in vanilla extract and espresso powder if using.
  7. Pour the chocolate mixture over the whipped topping layer and spread evenly with a spatula. The chocolate should be warm but not hot.
