A rich and gooey chocolate lava cake with a molten center and tender cake exterior, perfect for quick and impressive homemade dessert.

Ingredients

Scale
  • 100g (3.5 oz) bittersweet chocolate (60-70% cocoa)
  • 100g (7 tbsp) unsalted butter, softened
  • 150g (3/4 cup) granulated sugar
  • 3 large eggs, room temperature
  • 60g (1/2 cup) all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: cocoa powder or powdered sugar for dusting

Instructions

  1. Preheat your oven to 425°F (220°C). Butter four ramekins and dust them with cocoa powder, tapping out the excess. Set aside.
  2. Melt chocolate and butter together in a heatproof bowl over simmering water or microwave in short bursts, stirring often until smooth. Let cool slightly but do not harden.
  3. Whisk eggs and sugar in a separate bowl until thick, pale, and slightly frothy (3-4 minutes with mixer or 5-6 minutes by hand).
  4. Gently fold the melted chocolate mixture into the eggs and sugar. Then sift and fold in flour, vanilla extract, and salt. Mix just until combined.
  5. Divide batter evenly into prepared ramekins. Place on a baking sheet and bake for 12-14 minutes until edges are set and center jiggles slightly.
  6. Let cakes cool for 1 minute, run a knife around edges, invert onto plates, and serve immediately with optional ice cream or berries.

Notes

Watch baking time closely to avoid overbaking or underbaking. Use room temperature eggs for fluffier batter. Butter and dust ramekins with cocoa powder for easy release and a nice crust. Serve immediately for best molten effect. Variations include salted caramel center, berry additions, gluten-free flour swap, and vegan adaptations.
