  • 1 large egg (room temperature)
  • 16 oz (450g) cream cheese, softened (full-fat preferred)
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 tbsp sour cream or Greek yogurt
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, cinnamon, baking powder, and salt until combined.
  2. Cut in the cold, cubed butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
  3. Beat the egg and vanilla together, then stir into the butter-flour mixture until dough just comes together.
  4. Press about two-thirds of the dough firmly and evenly into a prepared 9×9-inch baking pan. Bake for 12-15 minutes until slightly golden. Remove from oven but keep oven on.
  5. While crust bakes, beat softened cream cheese in a medium bowl with an electric mixer until smooth and creamy (2-3 minutes). Add sugar and beat until combined.
  6. Mix in eggs one at a time, beating lightly after each addition. Stir in vanilla extract and sour cream or Greek yogurt until smooth.
  7. Pour cheesecake filling over the warm crust and spread evenly. Crumble remaining one-third of dough over the top.
  8. Bake for 30-35 minutes until cheesecake is set but slightly jiggly in the center. Avoid overbaking to prevent cracking.
  9. Mix sugar and cinnamon for topping in a small bowl. Immediately sprinkle over bars after removing from oven.
  10. Let bars cool completely at room temperature, then refrigerate for at least 3 hours or overnight to set.
  11. Cut into squares and serve chilled or at room temperature.

Use room temperature cream cheese and eggs for smooth filling. Avoid overmixing cheesecake to prevent cracking. Chill bars before cutting for clean slices. Cold butter is essential for flaky crust.
