  • 1 cup cottage cheese (full-fat or low-fat, small-curd preferred)
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1 cup onions, finely diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced or diced
  • 1 cup celery, sliced or diced
  • 2 tablespoons butter or olive oil
  • 1 cup milk (regular or dairy-free alternative)
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Dice the onions, mince the garlic, and slice the carrots and celery into bite-sized pieces.
  2. Heat a large pot over medium heat. Add the butter or olive oil and let it melt.
  3. Add the onions to the pot and sauté for 2-3 minutes until translucent.
  4. Add the garlic and cook for another minute until fragrant.
  5. Stir in the sliced carrots and celery, cooking for about 5 minutes until they start to soften.
  6. Pour in the chicken or vegetable broth and bring to a gentle boil. Let it simmer for 10 minutes or until the vegetables are tender.
  7. Reduce the heat to low and stir in the cottage cheese. Let it melt slightly into the soup.
  8. Remove the pot from the heat and use an immersion blender to blend the soup until smooth and creamy. If using a regular blender, work in batches and be cautious with hot liquids.
  9. Return the blended soup to the pot and stir in the milk. Heat gently, but do not allow the soup to boil.
  10. Season with salt and pepper to taste. Sprinkle fresh parsley or chives on top before serving.
