  • 4 cups beef broth
  • 45 garlic cloves, minced
  • 1 large onion, sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary, crushed
  • 2 tbsp Worcestershire sauce
  • Salt to taste (about 1.5 tsp)
  • Black pepper to taste (about 1 tsp)
  • 1216 slider buns (Hawaiian rolls recommended)
  • Butter (optional, for toasting buns)
  • Provolone or Swiss cheese slices (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Trim any excess fat from the chuck roast and pat dry with paper towels.
  2. Optional: Sear the beef in a skillet over medium-high heat for 5-7 minutes until browned on all sides.
  3. Place sliced onions and minced garlic at the bottom of the crockpot.
  4. Add the seared or raw beef on top of the onions and garlic.
  5. Sprinkle dried thyme, crushed rosemary, salt, and black pepper evenly over the beef.
  6. Pour beef broth and Worcestershire sauce over the beef, covering mostly but not fully submerging it.
  7. Cover and cook on low for 8-10 hours or on high for 4-6 hours until beef is fork-tender.
  8. Remove beef from crockpot and shred with two forks, discarding large pieces of fat.
  9. Strain cooking liquid through a fine mesh strainer into a saucepan and simmer over medium heat for 10-15 minutes to reduce and concentrate flavors. Season to taste.
  10. Optional: Toast slider buns with butter in a skillet until golden.
  11. Assemble sliders by piling shredded beef onto buns, adding cheese slices if desired, and warming under a broiler until cheese melts.
  12. Serve sliders with small bowls of au jus for dipping and garnish with chopped parsley.

Notes

Searing the beef before slow cooking adds extra flavor but is optional. Keep au jus warm during serving for best dipping experience. Use gluten-free buns and check Worcestershire sauce for gluten if needed. Avoid over-handling shredded beef to keep it tender. Store shredded beef and au jus separately in airtight containers for up to 3 days. Reheat gently with au jus to keep moist.
