  • 4 pounds bone-in, skin-on chicken thighs (boneless optional)
  • 45 garlic cloves, minced
  • ½ cup oil-packed sun-dried tomatoes, chopped (or dry-packed rehydrated)
  • ½ cup Kalamata olives, pitted and halved
  • 1 tablespoon Italian seasoning (oregano, basil, thyme blend)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 1 tablespoon fresh lemon juice
  • Optional: Fresh parsley or basil for garnish

Instructions

  1. Pat dry the chicken thighs with paper towels.
  2. In a large bowl, toss chicken thighs with Italian seasoning, salt, and black pepper until evenly coated.
  3. Add minced garlic and olive oil to the chicken and mix well.
  4. Chop sun-dried tomatoes and halve Kalamata olives; add to the bowl and gently mix to distribute evenly.
  5. Arrange chicken thighs skin side up in a single layer inside the crockpot.
  6. Pour the tomato, olive, and garlic mixture over the chicken.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken reaches an internal temperature of 165°F (74°C).
  8. Once cooked, squeeze fresh lemon juice over the chicken and garnish with chopped parsley or basil.
  9. Serve warm with couscous, rice, or a green salad, spooning plenty of sauce over the top.
  10. Optional: For crispy skin, broil cooked thighs in the oven for 3-5 minutes, watching carefully.
