  • 3/4 cup (150g) brown sugar
  • 1/2 cup (120ml) molasses
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 8 ounces (225g) cream cheese, softened
  • 1/4 cup (30g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan and line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt.
  3. In a large bowl, beat softened unsalted butter with brown sugar until creamy and light—about 2-3 minutes.
  4. Mix in molasses until fully combined. Then add eggs, one at a time, beating well after each addition.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Begin and end with the dry ingredients to ensure a smooth batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. While the loaf is cooling, make the frosting. Beat softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy.
  9. Once the loaf is completely cool, spread the cream cheese frosting evenly over the top. Slice and serve!
