A quick and easy grilled garlic shrimp recipe wrapped in foil packets, perfect for summer dinners with bold flavors and minimal cleanup.

  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, melted
  • 1 medium lemon, zested and juiced
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional veggies: sliced bell peppers, zucchini, or cherry tomatoes

Instructions

  1. Preheat the grill to medium-high heat, about 375°F to 400°F.
  2. In a mixing bowl, combine shrimp, minced garlic, melted butter, olive oil, lemon zest and juice, chopped parsley, red pepper flakes (if using), salt, and black pepper. Toss gently to coat evenly.
  3. Lay out four large sheets of heavy-duty aluminum foil (about 12×12 inches each). Divide the shrimp mixture evenly among the sheets. Add optional veggies if desired.
  4. Fold the foil over the shrimp and veggies to create sealed packets, folding edges tightly to trap steam.
  5. Place foil packets on the preheated grill. Cook for 8-10 minutes, then carefully flip and cook for another 5-7 minutes until shrimp are opaque, pink, and firm.
  6. Carefully open one packet to check doneness; shrimp should be curled and opaque. Cook a bit longer if needed.
  7. Transfer packets to plates, garnish with extra parsley and a squeeze of lemon, and serve hot.

Notes

Avoid overcooking shrimp to prevent rubbery texture. Seal foil packets tightly to trap steam and juices. Preheat grill properly for best sear. Can be baked in oven at 400°F for 12-15 minutes as an alternative. Swap butter with olive or coconut oil for dairy-free option.
