A quick and easy one-pan recipe combining smoky honey barbecue chicken with fluffy rice for a satisfying and flavorful dinner.

  • 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 1 cup white or jasmine rice (uncooked)
  • 1/2 cup honey BBQ sauce
  • 2 tbsp honey
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • Salt & pepper to taste
  • Green onions (optional, for garnish)

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear to remove excess starch.
  2. Cook the rice according to package instructions using 2 cups of chicken broth instead of water for added flavor. Set aside once done.
  3. In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 2 minced garlic cloves and sauté for 1 minute until fragrant.
  4. Add 1 lb of chicken pieces to the skillet and season with salt and pepper. Cook for 5-6 minutes, flipping occasionally, until the chicken is golden brown and fully cooked.
  5. Lower the heat and pour 1/2 cup of honey BBQ sauce and 2 tbsp of honey over the chicken. Mix well to coat the chicken evenly. Let it simmer for 3-4 minutes until slightly thickened.
  6. Stir in 1 tbsp of soy sauce for a balanced flavor profile. Taste and adjust seasoning as needed.
  7. Combine the cooked rice with the honey BBQ chicken in the skillet. Toss gently to mix and let the flavors meld for 2-3 minutes.
  8. Remove from heat and garnish with chopped green onions if desired. Serve warm and enjoy!
