  • 4 boneless, skinless chicken breasts (68 ounces each)
  • 1/4 cup (60 ml) freshly squeezed lemon juice (from 2 medium lemons)
  • Zest from 1 lemon
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Prepare the marinade by whisking together lemon juice, lemon zest, minced garlic, chopped rosemary and thyme, olive oil, kosher salt, black pepper, and honey or maple syrup if using in a medium bowl.
  2. Place chicken breasts in a large zip-top bag or shallow dish and pour marinade over them, ensuring each piece is fully coated. Seal or cover and refrigerate for at least 30 minutes, ideally 1-2 hours but no longer than 4 hours.
  3. Preheat grill to medium-high heat (about 400°F/204°C). Clean and lightly oil the grates.
  4. Remove chicken from marinade, letting excess drip off. Grill chicken for 6-7 minutes per side, flipping once, until grill marks appear and chicken is slightly firm but springy.
  5. Check doneness with a meat thermometer; internal temperature should reach 165°F (74°C). If no thermometer, cut into thickest piece to ensure juices run clear.
  6. Transfer chicken to a plate and tent loosely with foil. Let rest for 5 minutes to redistribute juices.
  7. Slice against the grain and serve warm with your favorite sides.

Notes

Pound chicken breasts to even thickness for uniform cooking. Rest chicken after grilling to keep it juicy. If chicken browns too quickly, move to a cooler part of the grill to finish cooking. Marinate between 30 minutes and 2 hours for best flavor. Use fresh herbs for best aroma and taste. If no grill available, use grill pan, cast-iron skillet, or bake at 400°F for 20-25 minutes.
