  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups M&Ms (regular, mini, or seasonal varieties)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together 1 cup (230g) softened unsalted butter, 3/4 cup (150g) granulated sugar, and 1/2 cup (100g) light brown sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
  3. Add 1 large egg and 2 teaspoons vanilla extract to the creamed mixture. Beat until fully combined.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, and 1/4 teaspoon salt. Gradually incorporate the dry ingredients into the wet mixture. Start with low speed to avoid flour flying everywhere!
  5. Fold in 1 1/2 cups of M&Ms using a spatula. Reserve a handful of M&Ms to press onto the tops of the cookies before baking.
  6. Use a medium cookie scoop or tablespoon to drop dough balls onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  7. Press a few reserved M&Ms onto the top of each cookie for extra color and chocolate goodness.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will firm up as they cool.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
