  • 1 cup (225g) unsalted butter, softened
  • 1 cup (120g) powdered sugar, plus extra for rolling
  • 1 cup (170g) mint chocolate chips
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: 1 tablespoon finely chopped fresh mint leaves
  • Optional: ½ teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. Cream the butter and powdered sugar in a large bowl using a mixer until light and fluffy, about 3–4 minutes.
  3. Mix in vanilla extract and salt until combined.
  4. Gradually add the flour, mixing on low speed until just combined. If dough is too dry, add a teaspoon of milk or cream.
  5. Gently fold in the mint chocolate chips using a spatula.
  6. Scoop about 1 ½ tablespoons (20g) of dough per cookie and roll into smooth balls. Place evenly spaced on prepared baking sheets.
  7. Bake for 12–15 minutes at 350°F (175°C) until cookies look set and slightly puffed but not browned.
  8. While cookies are still warm, roll each cookie in extra powdered sugar until well coated.
  9. Place coated cookies on a cooling rack and let cool completely before serving.

Notes

Use softened butter, not melted, for best texture. Sift powdered sugar before rolling to avoid clumps. Roll cookies in powdered sugar while warm for better coating. For gluten-free, substitute flour with a 1-to-1 gluten-free blend and add xanthan gum if missing. For vegan, use dairy-free butter and vegan mint chocolate chips.
