  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup candy-coated chocolate pieces (like M&Ms)
  • 1/2 cup mini chocolate chips
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Food coloring (orange, green, or purple)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and fluffy (about 2-3 minutes). Add the eggs and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the oats, all-purpose flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until well incorporated. Fold in the candy-coated chocolates and mini chocolate chips.
  5. Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack.
  6. While the cookies cool, beat the softened butter with powdered sugar until fluffy. Add the heavy cream and vanilla extract, and mix until smooth. Divide the frosting into bowls and add food coloring as desired.
  7. Once the cookies are fully cooled, spread or pipe frosting onto the bottom of one cookie. Place another cookie on top, gently pressing to create a sandwich. Repeat with the remaining cookies.
