  • 46 bone-in, skin-on chicken thighs (about 1.5 pounds or 700 grams)
  • 2 medium fresh lemons, thinly sliced and juiced
  • 45 garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped (or dried)
  • 1 tablespoon fresh thyme, finely chopped (or dried)
  • 3 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 cup (60 ml) chicken broth
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels and season generously with salt and freshly cracked black pepper on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  4. Add chicken thighs skin-side down and sear without moving for 5-6 minutes until golden and crispy.
  5. Flip chicken and sear the other side for 3 minutes, then remove chicken from the pan and set aside.
  6. Add minced garlic to the hot pan and sauté for 30 seconds until fragrant.
  7. Add rosemary and thyme and stir to release their aroma.
  8. Place lemon slices evenly in the pan, then nestle chicken thighs back on top skin-side up.
  9. Squeeze juice of one lemon over the chicken and pour in chicken broth.
  10. Optionally sprinkle red pepper flakes for mild heat.
  11. Transfer skillet to the preheated oven and roast for 18-20 minutes until chicken reaches 165°F (74°C) internal temperature and skin is crispy.
  12. Remove from oven and let chicken rest for 5 minutes.
  13. Serve with pan juices and roasted lemon slices spooned over the top.

Notes

Dry chicken skin thoroughly before searing to ensure crispiness. Do not overcrowd the pan; cook in batches if necessary. Use a meat thermometer to check for doneness (165°F internal temperature). If pan sauce is too thin after roasting, simmer on stovetop to thicken. Rest chicken after cooking to lock in juices.
