Instructions

  1. Preheat your broiler to high and position the rack about 6 inches from the heat source.
  2. Shuck the oysters using an oyster knife and kitchen towel for grip. Discard the top shell and arrange oysters on a baking sheet lined with rock salt or crumpled foil to keep them stable.
  3. In a skillet over medium heat, melt the butter. Add minced garlic and diced shallot, sauté until fragrant and translucent (2-3 minutes). Add chopped spinach and cook until just wilted (about 1 minute). Remove from heat.
  4. In a mixing bowl, combine the sautéed mixture with chopped parsley, panko breadcrumbs, grated Parmesan, and lemon zest. Season with salt, pepper, and Tabasco if using. Stir well to blend flavors; mixture should be moist but not soggy.
