These pink champagne jello shots combine the fizz of pink champagne with a playful jello texture, making them a fun and festive party treat that’s easy to prepare and sure to impress guests.

  • 2 cups (480 ml) pink champagne or sparkling rosé
  • 4 envelopes (about 4 tablespoons or 40 grams) unflavored gelatin
  • 1 cup (240 ml) cold water
  • ½ cup (100 grams) granulated sugar
  • 2 tablespoons (30 ml) lemon juice
  • Optional: a few drops pink food coloring
  • Optional: fresh berries (raspberries or strawberries) for garnish or inside the shots

Instructions

  1. Pour 1 cup (240 ml) cold water into a medium bowl. Sprinkle the 4 envelopes (40 grams) of unflavored gelatin evenly over the surface. Let it sit for about 5 minutes until the gelatin absorbs the water and becomes spongy.
  2. In a small saucepan, combine the sugar (½ cup / 100 grams) and lemon juice (2 tablespoons / 30 ml) with 1 cup (240 ml) of pink champagne. Warm gently over low heat, stirring until sugar dissolves completely. Avoid boiling.
  3. Remove the saucepan from heat and stir in the bloomed gelatin. Whisk gently but thoroughly until the gelatin is fully dissolved—no lumps or graininess.
  4. Pour in the remaining 1 cup (240 ml) of chilled pink champagne. Stir gently to mix. Add a few drops of pink food coloring if desired.
  5. Carefully spoon or pour the mixture into shot glasses or molds, filling each about ¾ full. Add fresh berries if desired.
  6. Transfer to the refrigerator and chill for at least 3-4 hours, preferably overnight, until set.
  7. Serve chilled, popping shots out of molds or serving directly in glasses. Garnish with a tiny berry or mint leaf if desired.

Notes

Do not boil the champagne to preserve bubbles. Bloom gelatin first to avoid lumps. Use cold champagne when folding in to retain sparkle. Chill fully for best texture. Silicone molds make popping shots easier. If gelatin doesn’t set, check alcohol content and gelatin amount balance.
